I came across this recipe recently and its now one of my favourite dressings.

1/4 cup avocado oil
1/4 cup fresh lemon juice
1/4 teaspoon lemon zest plus extra to taste
2 tablespoon plain dijon mustard
2 cloves fresh minced garlic
1/4 teaspoon dried oregano leaves
1/4 teaspoon salt
Pinch of freshly ground black pepper
Zest lemons and set zest aside before juicing lemons.
Poor the lemon juice into a blender and add the 1/4 teaspoon of lemon zest and about half of the minced garlic.
Add the remaining dressing ingredients and blend until well mixed.
Taste and add more zest and or garlic if desired.
If you want a sweeter dressing add a small amount of raw some sugar or honey.
Transfer the vinaigrette to a container for storing.
Shake well before using.
Store in the fridge for several days.
