There’s something about Smoked Salmon & Herb Sandwiches that feels instantly elegant, like a little taste of summer luxury. Bread, salmon, and fresh herbs come together in the simplest way, perfect for lazy lunches, picnics, or when you just feel like treating yourself. Light, fresh, and a little bit posh, these sandwiches make even an ordinary day feel special.

Ingredients:
250 g cream cheese, softened
2 tbsp fresh dill, finely chopped
2 tbsp fresh chives, finely chopped
Finely grated zest and juice of ½ lemon
A small pinch of Avohaven Herbalicious Salt, to taste
16 slices wholemeal or seeded sandwich bread
400 g smoked salmon slices (New Zealand cold-smoked if available)
Instructions:
In a small bowl, mix the cream cheese with dill, chives, lemon zest, lemon juice, and Avohaven Herbalicious Salt. Stir until smooth and evenly combined.
Lay out the bread slices on a clean board. Spread a generous layer of the herb cream cheese over each slice.
Arrange the smoked salmon evenly over half the bread slices, then top with the remaining slices, cream cheese side down.
Using a sharp knife, neatly remove the crusts, then cut each sandwich into triangles or fingers. Arrange on a platter and serve fresh.
These are perfect for brunch, a light lunch, or an elegant platter.
For extra freshness, add a few baby rocket leaves or cucumber ribbons before sandwiching.
