Ingredients:

12 chicken drumsticks

1 Tbsp Cajun seasoning

1/3 cup extra virgin olive oil

2 cups Greek-style natural yoghurt

2 cloves garlic, crushed

3 corn cobbettes


Instructions:

Place the chicken drumsticks into a large glass or non-reactive dish. Sprinkle over the Cajun seasoning and pour in 1/4 cup of the olive oil. Toss well so the chicken is evenly coated, then cover and refrigerate for about an hour to allow the flavours to develop.


Set aside a small handful of mint leaves for serving. Add the remaining mint leaves, chopped stems, yoghurt and crushed garlic to a food processor. Blend until mostly smooth, keeping a little texture. Spoon into a bowl, cover and chill until ready to serve.


Heat a chargrill pan or barbecue to medium-high. Cook the chicken, turning regularly and brushing with any leftover marinade, for around 15 minutes or until cooked through and nicely charred.


Lightly brush the corn with the remaining olive oil and place it on the grill. Cook for about 10 minutes, turning often, until tender and lightly browned.


Arrange the chicken and corn on a serving platter or board. Scatter over the reserved mint leaves and serve with the mint yogurt on the side.
