High-Protein Beef & Egg Rice Bowls

There is nothing new to this recipe but it has been doing the rounds on social media as the 'Boy Kibble' recipe. At its core, it’s a no-fuss combo of lean beef and rice, topped with a golden egg. So here it is in all it's glory, High-protein Beef & Egg Rice Bowls.
Beef & Egg Rice Bowls are one of those dependable, back-pocket meals: simple enough for a weeknight, hearty enough to keep you satisfied, and easy to customise with whatever you’ve got in the fridge. Serves 2–3

Ingreditents:
For the Beef:
500 g lean beef mince
1 tablespoon olive oil
2 tablespoons taco seasoning
1 cup frozen peas (about 150g)
½ teaspoon salt
¼ teaspoon freshly ground black pepper
For the rice:
1 cup (200 g) long-grain white rice (jasmine or basmati both work well)
2 cups (500 ml) water
Pinch of salt
To serve:
4–6 free-range eggs
Extra olive oil or butter for frying
Pinch of chilli flakes (optional)
Instructions:
Rinse the rice under cold water until the water runs mostly clear. Add it to a medium saucepan with 2 cups of water and a pinch of salt. Bring to the boil, then reduce to low, cover with a tight-fitting lid and simmer for 12–15 minutes until the water is absorbed.
Remove from the heat and leave covered for 5 minutes before fluffing with a fork.
Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the beef mince and cook for 8–10 minutes, breaking it up with a wooden spoon, until nicely browned and cooked through.
Stir in the taco seasoning and frozen peas. Cook for another 3–5 minutes, until the peas are heated through. Season with salt and pepper to taste. If the mixture looks a little dry, add a splash of water to loosen it slightly.
In a separate pan, heat a small amount of oil or butter over medium heat.
Crack in the eggs and cook to your liking. For runny yolks, cook for about 2–3 minutes for sunny-side up, or flip and cook briefly for over-easy.
Divide the rice between bowls. Spoon the beef and pea mixture over the top.
Finish with a fried egg on each bowl and a sprinkle of chilli flakes if you like a little heat.
Tips:
Add frozen mixed vegetables instead of just peas to boost fibre and colour.
Swap taco seasoning for soy sauce, garlic and ginger for an Asian-inspired twist.
