Lemon-Rubbed Salmon

This Lemon-Rubbed Salmon is fresh, light, and full of flavour, perfect for a quick weeknight dinner or a relaxed summer barbecue. The Avohaven Lemon Pepper Seasoning adds a gentle citrus-pepper kick that complements the lemon and tarragon beautifully, making this dish bright, balanced, and ready in minutes.

Ingredients:
Zest and juice of 1 large lemon
1 garlic clove, finely chopped
2 tablespoons olive oil
½ pack (about 2 tablespoons) fresh tarragon, finely chopped
½ teaspoon Avohaven Lemon Pepper Seasoning
4 boneless salmon fillets (about 150g each)
Instructions:
In a shallow dish, combine the lemon zest and juice, garlic, olive oil, tarragon, and Avohaven Lemon Pepper Seasoning. Mix well.
Add the salmon fillets, turning them to coat evenly. Rub the mixture gently into the fish. Cover and leave to marinate for 10 minutes at room temperature.
To cook, heat the barbecue to medium-high and place the salmon on a lightly oiled piece of foil. Cook for 5–8 minutes, depending on the thickness of the fillets, until just cooked through. Alternatively, preheat the oven grill to high and cook the salmon on a lined baking tray for 7–10 minutes.
Serve hot, with couscous, salad or seasonal greens on the side.
Sprinkle a little extra Avohaven Lemon Pepper Seasoning just before serving for an extra burst of flavour.
