French Onion Curried Sausages

Our French Onion Curried Sausages is an easy, no-fuss dinner that brings together the rich, savoury flavour of French onion soup with the gentle warmth of our Avohaven Sunshine Curry. Curried sausages have long been a favourite when you need something hearty and budget-friendly, and this version makes the most of simple ingredients without compromising on taste. Using French onion soup mix and water in place of stock adds depth of flavour while keeping things affordable, and the extra vegetables help make the meal go even further. Mild enough for the kids, quick enough for busy nights, and perfect for using up leftover sausages – it’s comfort food you’ll want to come back to again and again.

Ingredients:
1 tbsp vegetable oil (or your preferred cooking oil)
About 7–8 pre-cooked sausages (around 560g) (Beef, Chicken or Pork Sausages will all work well), thickly sliced into rings
2 small brown onions, sliced into thin wedges
2 medium carrots, and sliced into rings
2 celery sticks, trimmed and sliced
2 garlic cloves, crushed
1 tbsp mild curry powder (Avohaven Sunshine Curry works perfectly)
1 packet Maggi French onion soup mix (40–45g)
500ml (2 cups) water
150g (1 cup) frozen peas
Instructions:
Heat oil in a large frying pan over medium heat.
Add the sliced sausages and cook for 2–3 minutes, turning occasionally, until lightly browned. Transfer to a plate and set aside.
Add onion, carrot, and celery to the pan. Cook, stirring occasionally, for 4–5 minutes or until the onion starts to soften.
Stir in the garlic and curry powder. Cook for 1 minute, stirring, until fragrant.
Add the French onion soup mix and water, stirring until it begins to simmer.
Return the sausages to the pan along with the peas. Stir to combine and cook for a further 3–4 minutes, or until heated through.
Taste and adjust seasoning if needed.
Serving Ideas:
Spoon over fluffy white rice for a comforting, filling dinner.
Serve with buttery mashed potato to soak up all the delicious gravy.
Pair with couscous for a lighter, quick-cooking alternative.
Try it with crusty bread on the side for dipping.
