Chickpea Fritters

I often make this as a tasty starter but equally enjoy this as a meal if its just me at dinner time.

If you are making the fritters as a afternoon snack for a group of friends, I would recommend doubling the recipe and making twice as many!

 

Ingredients:

1x 400g can of chickpeas in spring water

1/4 cup of all purpose flour

1/4 cup grated Parmesan cheese

1 tablespoon chopped parsley (or coriander)

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 black pepper

2 tablespoons of spring water (from the chickpeas can)

2 tablespoons of avocado oil (for frying)


Instructions:

Drain and rinse the chickpeas and set aside. Do not discard the spring water that the chickpeas came in.

In the food processor, combine the chickpeas, all purpose flour, Parmesan, parsley, cumin, garlic powder, salt and pepper with two tablespoons of your saved spring water. Pulse in bursts to combine the ingredients until they are well blended.

Form the mixture into parts and form into thin patties. Create 6 to 8 patties depending on whether you are creating a starter or main meal.

In a heavy pan over a medium heat, heat the oil until shimmering, then add the chickpea fritters and cook until browned and fully cooked through. This should take 2-4 minutes per side.

Place on a plate lined with a paper towel to absorb any excess oil, then serve.

Serve with your favourite sauce on the side or drizzle with one of our vinaigrettes, or try one of these.
