The incredible Jane de Graaff (https://www.janedegraaff.com/) has been sharing Christmas goodies, and this particular recipe, reminiscent of one my grandmother used to make, is too delightful not to share here: Jane's stained glass jelly cheesecake. It's the ultimate nostalgic treat.
Ingredients:
4 x jelly packs - lime, raspberry, mango, strawberry
1 x pack of Biscoff biscuits
120g butter, melted
500g cream cheese, room temp
1 Tbls powdered gelatine (dissolved in 1/2 cup boiling water and cooled)
1/2 tin sweetened condensed milk
Instructions:
Mix up each pack of jelly with 1 cup of boiling water to dissolve and set in the fridge until firm.
Blitz up the Biscoff biscuits until fine crumbs, then blitz again with melted butter. Press into a lined springform cake tin and chill until firm.
Whip cream cheese until smooth, add the sweetened condensed milk and whip again. Repeat with the cooled gelatine.
Remove the jelly from containers and chop into large cubes, reserving a little of each and then fold the rest into the cream mix. Spoon into the chilled biscuit crust and add reserved jelly to the top.
Chill again until firm (4 hrs), release from cake tin and decorate with optional cream rosettes.
