Ingredients:
2 large eggplants, sliced into rounds just over 1cm thick
2 tablespoons oil (avocado or olive)
Salt and pepper to taste (Herbalicious or Salt'n'Peppa)
1/2 cup crumbled feta cheese (more if you wish)
1/4 cup fresh mint leaves, chopped
1/4 cup chopped fresh coriander
Juice of half a 1/2 lemon
Instructions:
Preheat the grill pan or BBQ to medium-high heat. Brush eggplant slices with oil and season with salt and pepper.
Place eggplant slices on the grill and cook for 4-5 minutes on each side until tender and charred.
Arrange grilled eggplant on a serving platter.
Sprinkle with crumbled feta cheese and chopped herbs.
Drizzle with lemon juice if desired and serve warm.
Options:
Replace the lemon juice with a drizzle of one of our vinaigrette's or a drizzle of our Asian Inspired Chilli Oil if you prefer some heat.
