Eggplant Stir-Fry

Ingredients:

1 large eggplant, cubed

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, minced

1 Red Capsicum, sliced

1 onion, sliced

2 green onions, chopped

Salt & Pepper (or Salt'n'Peppa)

Sesame seeds for garnish (or use Bagel Seasoning)


Instructions:

Create the Sauce: 

In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and sesame oil.


Cook the Eggplant: 

Heat a large pan or wok over medium-high heat. Add the cubed eggplant and cook until it starts to soften.


Add Aromatics and Veggies: 

Add garlic, ginger, capsicum, and onion to the skillet. Stir-fry for 3-4 minutes until vegetables are tender-crisp.


Add Sauce: 

Pour the sauce over the vegetables and stir to coat. Cook for another 2-3 minutes until everything is well combined and heated through.


Garnish with chopped green onions and sesame seeds. Serve hot over rice or noodles.
