Roasted Tomatoes with Smashed Avo Seasoning

There’s something about roasted tomatoes that feels like summer in slow motion. They start off bright and juicy, then mellow in the oven until they’re sweet, soft and a little caramelised around the edges. I like to take that simple base and lift it with our Avohaven Smashed Avo Seasoning. It’s a New Zealand take on Mexican flavours, light and earthy with hints of capsicum, cumin, chilli flakes and fennel, rounded out by herbs and a touch of citrus. When it hits warm tomatoes, everything opens up. The tomatoes get sweeter, the spices get toastier and the whole tray smells like you’ve done far more work than you actually have. This is one of those recipes you make once and then keep coming back to. It’s easy, colourful and goes with just about anything, from brunch eggs to grilled chicken or a simple slice of sourdough. Perfect for the days when you want something fresh but comforting.

Ingredients:
Tomatoes cut in half (you can use any tomatoes)
Olive Oil (to coat the tomatoes)
Avohaven Smashed Avo Seasoning (season to taste)
Instructions:
Heat the oven to 190°C fan.
Slice the tomatoes in half and lay them in a roasting dish, cut side up, keeping them in a single layer.
Drizzle a little oil over the top, then sprinkle over Avohaven Smashed Avo Seasoning. Use as much as you like.
Roast for about 20 minutes, give or take depending on the size of your tomatoes, until they’re tender and starting to caramelise around the edges.
