This Quick & Easy Chicken Chow Mein is one of those dinners that always feels like a win. It’s quick to prepare, full of flavour, and ticks the box for comfort food while still offering a colourful plate of veggies and noodles. The best part? If you’re lucky enough to have leftovers, it makes an even better lunch the next day — a satisfying meal that reheats like a dream. This version is made with simple ingredients, no packet sauces, and just enough savoury richness to keep everyone coming back for more. And for those who like to take things up a notch, a sprinkle of Avohaven’s SPG+ or Salt’n’Peppa brings that extra touch of magic.

Ingredients:
500g chicken breast or thigh, thinly sliced
1 tbsp soy sauce
1 tsp sesame oil
1 tsp cornflour
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sugar
¼ cup water
250g dried egg noodles
2 tbsp neutral oil (e.g. canola or rice bran)
2 cloves garlic, minced
1 carrot, peeled and sliced into matchsticks
1 capsicum, thinly sliced (any colour)
Optional Garnish - Avohaven SPG+ or Salt’n’Peppa
Instructions:
In a bowl by combine the chicken, soy sauce, sesame oil, and cornflour. Set aside while preparing other ingredients.
Boil the noodles as per the packet instructions. Drain, rinse with cold water, and set aside.
Stir together the soy sauce, oyster sauce, sugar, and water in a small bowl and set aside.
Heat 1 tbsp oil in a wok or large frying pan over medium-high heat. Add the chicken and stir-fry for 3–4 minutes until cooked through. Remove and set aside.
Add the remaining oil to the wok or frying pan. Stir-fry garlic, carrot, and capsicum for 2–3 minutes, until slightly softened but still vibrant.
Return the chicken to the pan with the veggies, add in the cooked noodles and pour over the sauce. Toss everything together for 2–3 minutes, letting the sauce coat evenly and everything heat through.
Serve hot with a sprinkle of Avohaven SPG+ for a mellow savoury lift or Salt’n’Peppa for a peppery kick.
