Pumpkin & Potato Soup

Indulge in the warmth of our hearty pumpkin and potato soup, a quick and easy delight that soothes the soul. Versatile and comforting, it’s perfect for any occasion—whether a fulfilling lunch, a comforting dinner, or a delightful starter. Elevate your bowl with a drizzle of our chili oil, dried chilli's or a sprinkle of our Everything Bagel Seasoning, or savor it simply with crusty bread for a satisfying meal that promises to warm you from the inside out.

 
Pumpkin and Potato soup. Ideal for those cosy winter days. Quick and easy to make.

Ingredients:

5 medium potato's cut into small even cubes

750gms pumpkin cut into even cubes

2 medium white onions diced

5 cloves garlic finely chopped

2 tablespoons oil (avocado or olive)

2 teaspoons ground ginger

1.25 teaspoons curry powder

5 cups vegetable stock

4 cups milk


Instructions:

Add the oil to a pan and saute the onions, garlic, ginger and curry powder gently for 4-5 minutes until the onion is soft and translucent.

Add the pumpkin and potato and cook for 5 minutes, stirring occasionally.

Add the stock to the pan, bring to the boil. Reduce the heat to a simmer and cover.

Cook for approximately 10 minutes or until the pumpkin and potatoes are very soft.

When cooked, remove from the heat and using a stick blender start to blend.

Slowly add the milk while blending and continue to blend until smooth.

Return to the heat and gently warm the soup to the desired serving temperature.


Top with your favourite toppings, coriander, parsley, Salt & Pepper (or Salt'n'Peppa), Everything Bagel seasoning, sliced dried chilli, nutmeg etc and serve with crusty bread.
