One-Pan Creamy Tuscan Chicken

This easy dinner ticks all the boxes: it’s rich, flavoursome, and comes together in under 30 minutes with just a handful of ingredients. Whether you’re cooking for guests or just need a quick midweek win, it’s a dish that can be dressed up with pasta or creamy mash, or kept simple with crusty bread and a sprinkle of Avohaven seasoning to finish. Either way, it's a guaranteed crowd pleaser.

One-Pan Creamy Tuscan Chicken

Ingredients:

4 boneless chicken thighs (or breasts)

Salt & pepper (or Avohaven Salt’n’Peppa)

1 tbsp olive oil

2 cloves garlic, minced

1 tsp dried Italian herbs (or mixed herbs)

1 cup cherry tomatoes, halved

½ cup sun-dried tomatoes, chopped

1 cup baby spinach

1 cup cream (or lite cooking cream)

⅓ cup grated parmesan

Cooked pasta, rice, or mashed potatoes to serve


Instructions:

Pat chicken dry and season with salt and pepper (or Avohaven Salt’n’Peppa). Heat olive oil in a pan over medium-high heat. Sear chicken until golden and cooked through (4–5 mins per side). Remove and set aside.


In the same pan, add a dash more oil if needed and sauté garlic for 30 seconds. Add sun-dried tomatoes, cherry tomatoes, and herbs. Cook for 2 minutes until softened.


Pour in cream, add parmesan, and stir until combined. Add spinach and stir until wilted. Simmer gently for 2–3 minutes.


Return chicken to the pan, coat in sauce, and heat through for another 2 minutes.


Sprinkle a pinch of Avohaven Herbalicious or Chilli Garlic Salt just before serving for that elevated finish.
