Ingredients:
1 packed cup of coriander leaves (roughly chopped)
1 cup of Italian (flat leaf) parsley (roughly chopped)
1 green capsicum, seeded and chopped
1 green chilli (optional)
2 cloves of garlic, crushed
1 teaspoon of salt
½ teaspoon of ground cumin
½ cup of oil (avocado or olive) - our Garlic or Chilli/Garlic oil work well
Zest of one small to medium lemon or lime
Instructions:
Blend all the ingredients together using a food processor or kitchen wizz.
Makes just over a cup and will keep in the fridge for a couple of days
