Lamingtons are a beloved treat in New Zealand and Australia, known for their light sponge, chocolate coating, and coconut topping. Our Lamington Slice transforms this classic into an easy-to-make traybake, layering all the iconic flavours in a simple, shareable slice. Perfect for gatherings, afternoon tea, or a nostalgic treat anytime!
Ingredients:
Cake
125g unsalted butter softened
3/4 cup caster sugar
1 tsp vanilla essence
2 eggs
1 1/4 cups plain flour
1 1/4 tsp baking powder
1 cup milk
1 cup shredded coconut
Chocolate Icing
3/4 cup icing sugar
2 tbs cocoa powder
1/3 cup boiling water
20g unsalted butter melted
Instructions:
Preheat oven to 160C.
To make the chocolate icing, combine icing sugar, cocoa, water, and butter in a bowl and whisk together. Then, set it aside.
To make the base, combine the butter, sugar, and vanilla in a bowl and with an electric mixer beat the ingredients until the mixture is light and creamy.
Slowly incorporate the eggs and continue to beat until mixed well.
Sifted flour and baking powder into the butter mixture, mixed well until combined then add the milk and stir before spooning the mixture into a lightly greased and lined 20 x 30cm slice tin.
Bake for 20 minutes or until cooked when tested with skewer.
While still warm, cut the slice into squares and carefully pour over chocolate icing. Top with coconut.
