Green Bean & Feta Salad

Is there anything better than fresh green beans? Summer goodness right here!

 

Ingredients:

350gms Green Beans trimmed

1 Red Onion (chopped or sliced thinly)

3/4 tablespoon fresh Coriander (or you can use a flat leafed parsley)

2 Radishes thinly sliced

3/4 cup of crumbled Feta cheese

1 teaspoon of fresh chopped oregano (or 1/2 teaspoon of dried oregano)

2 tablespoons Red Wine Vinegar

5 tablespoons Avocado Oil

6 cherry tomatoes cut into quarters

Pepper to taste


Instructions:

Bring about 5cm of water to boil in the bottom of a steamer or in a medium sized pan. Add the green beans to the top of the steamer or place them in a metal colander set over the pan of water. Cover and let them steam for about 5 minutes or until just tender.

Transfer the beans to a bowl and add the onion, coriander and radish.


In a separate bowl, whisk together the vinegar and avocado oil before pouring over the salad and tossing gently until the beans are radish are coated.


Add the crumbled feta and tomato quarters and sprinkle with the oregano. Add pepper to taste.

(You could add Everything Avocado Seasoning!)
