Creamy Avocado Vinaigrette

This is one of my favourite dressing. Its easy to prepare and because it uses ripe avocado, it's a creamier dressing than your typical vinaigrette. It's also super easy to adapt to suit your meal. Add extra garlic for a strong garlic taste or finely chopped red chilli for colour and some warmth. This will definitely jazz up your summer salad and impresses your guests.

 

Ingredients

1/2 cup of avocado oil

1/4 cup of olive oil

1/4 cup of white vinegar

1 teaspoon of lemon juice (or more if you prefer)

1 teaspoon of sesame oil (or more if you prefer)

1 avocado peeled, pitted and chopped

4 cloves of garlic minced (or more if you prefer)

1 teaspoon ground cumin

Salt and pepper to taste


Instructions

Combine the avocado oil, the olive oil, vinegar, lemon juice and sesame oil and blend in a blender until emulsified. This will take a few minutes. Add the avocado and garlic and blend until combined. This will take a few minutes. Add the cumin and season with salt and pepper to your taste and blend again.

Transfer the vinaigrette to a container and chill in the refrigerator for at least an hour.

Shake well before using.

Keep in the fridge for up to a week.
