Chocolate Banana Bars

Chocolate Banana Bars

Ingredients:

400 g rolled oats

6 medium ripe bananas (about 2 cups mashed)

250 g smooth peanut butter (or any nut/seed butter you prefer)

40 g dark chocolate chips (plus extra for topping)


Instructions:

Heat your oven to 180°C (160°C fan bake). Line a 20 cm square baking tin with baking paper, leaving some overhang for easy removal.


In a large mixing bowl, mash the bananas until smooth. Add the peanut butter and stir until combined. Mix in the oats and fold through half of the chocolate chips.


Spoon the mixture into the prepared tin and press down firmly into an even layer. Sprinkle the remaining chocolate chips on top.


Place in the oven and bake for 15–18 minutes, or until golden on top and set in the centre.


Remove from the oven and leave to cool completely in the tin. Once cooled, lift out and cut into bars or squares. Store in an airtight container.
