Whether you’re firing up the BBQ to grill chicken just for this recipe, repurposing yesterday’s leftovers, or saving time with a store-bought rotisserie chicken, it’s designed to fit into your busy schedule. The real highlight is the creamy, tangy sauce, elevated with a touch of Avohaven’s Salt’n’Peppa gourmet salt for a perfect depth of flavour. Chicken Pasta Salad

Ingredients:

For the Salad:

2-3 cups of sliced chicken. You can grill chicken on the BBQ specifically for this recipe, use yesterday’s leftovers, or even pick up a store-bought rotisserie chicken to save time.

4 cups of cooked penne pasta (or whatever pasta you have in your pantry),

1/4 med red onion diced finely

1 avocado cut into pieces

Fresh coriander

You can add in any other veggies or leftovers you have.


For the Dressing:

1/3 cup plain Greek yogurt

1 tablespoon BBQ sauce

1/2 tablespoon vinegar

1/2 tablespoon brown sugar

Pinch of garlic powder

Pinch of Avohaven Salt'n'Peppa (or use regular salt & pepper)


Instructions:

To prepare the dressing, mix the ingredients in a small bowl or jug until well combined. Adjust the seasoning to taste, then set aside.


In a large bowl, combine the cooked pasta, onion, avocado, and any other vegetables you have chosen for your salad. Pour the dressing over the mixture and stir to combine. Gently mix in the chicken.
