Ingredients:
1 cup self-raising flour
1 cup brown sugar
1 cup desiccated coconut
150g butter, melted
395g condensed milk
2 tbsp golden syrup
30g butter (extra)
1 cup Milk Chocolate Melts
Instructions:
Preheat your oven to 180°C and line an 18cm x 28cm lamington pan with baking paper.
In a mixing bowl, combine the flour, brown sugar, coconut, and melted butter. Stir well.
Press the mixture evenly into the prepared pan and bake for 10 minutes.
While the base is baking, prepare the caramel. In a saucepan, combine the condensed milk, golden syrup, and extra butter. Stir constantly over medium heat until the mixture is almost boiling. Reduce the heat to low and continue stirring for 5 minutes, allowing the caramel to thicken slightly.
Pour the caramel evenly over the baked base and return the pan to the oven. Bake for another 10 minutes. Remove and allow to cool completely.
Melt the chocolate in the microwave or a double boiler, then spread it evenly over the cooled caramel layer.
Refrigerate for about 2 hours or until fully set.
Slice into pieces and serve.
