Cajun Potato Bake

Cajun Potato Bake

Ingredients:

1 kg floury potatoes (such as Agria), peeled and thinly sliced (about 3 mm thick)

1 Tbsp butter

3 cloves garlic, finely chopped

1 ½ cups cream

1 Tbsp Avohaven Cajun Spice

1 cup grated cheddar cheese

1 cup grated parmesan cheese


Instructions:

Preheat oven to 180°C (fan bake 160°C). Grease a medium baking dish (around 20 x 20 cm).


Peel and slice the potatoes into thin rounds. A mandoline makes this quick, but a sharp knife works too.


In a small saucepan, melt the butter over medium heat. Add the garlic and cook for about 30 seconds until fragrant. Pour in the cream and stir through the Avohaven Cajun Spice. Warm gently until the cream just starts to simmer, then take it off the heat.


Arrange half of the sliced potatoes in the baking dish, overlapping slightly. Pour over half the cream mixture and sprinkle with half the cheddar and parmesan.


Repeat with the remaining potatoes, cream, and cheeses, finishing with a generous layer of cheese on top.


Bake uncovered for 70–75 minutes, or until the potatoes are tender and the top is golden and bubbling. If your oven runs hot, start checking after an hour.


Let the bake rest for 5 minutes before serving.


Serving suggestion: This bake is delicious on its own, but it also makes the perfect side dish with roast chicken, grilled steak, or a crisp green salad.
