This is an adaptation of a recipe I found online by Caroline Chambers (carolinechambers.com).
I couldn't believe how easy and tasty it was... so here it is for you to enjoy also.
This tastes as good as it looked and I tucked in straight away and completely forgot to get a photo. It's too good not to sure so I have used Caroline's original image.
Ingredients:
1 large Chicken breast halved horizontally (serves two people with half a breast each)
1/3 cup of all purpose flour
1/2 teaspoon of kosher salt
1/4 teaspoon of pepper
1 large egg whisked
1 cup of panko bread crumbs
1/4 cup of Everything Avocado Seasoning
Avocado oil for pan frying the chicken
Instructions:
Set yourself up a coating station to coat your chicken.
You want to coat the chicken in the flour, then through the egg wash and onto the mixture of panko crumbs combined with the Everything Avocado seasoning.
Ensure the chicken has a thin coating of the flour before dipping it into the egg and then onto the panko and EA Seasoning mix. You want to make sure that the crumb mix covers the chicken nicely and that there is no egg yellow showing on the chicken.
Head the oil in a shallow pan and once hot cook the chicken a piece at a time until golden brown and done.
A tip from Caroline (which really worked!) - transfer the cooked chicken from the pan directly to a paper towel lined plate and sprinkle with salt. Don't place the chicken directly onto a plate or a chopping board. The paper towel absorbs the excess oil and prevents the chicken from continuing cook or becoming greasy from the oil.
